Coffee Processing Course (Jointly hosted with Harley Estate) with Manuel Diaz

Introducing this course for the first time ever, Red Sirocco and the Harley Estate together conducted this 3-day residential Coffee Processing Course, curated for individuals working in the post-harvest processing of coffee. The course aimed to provide a comprehensive and hands-on learning experience about the major processing methods, and the best practices to achieve diverse flavour profiles.

The course is a primer to understanding the key factors that influence the quality of coffee, including harvesting and the coffee cherry ripening cycle, coffee processing methods, standards and critical control points for high quality coffee processing. It also details the metabolic and embryogenic activity, fermentation, drying, and sensory evaluation for coffee processing quality control and processing treatments.

Q Grader Arabica Calibration Course with Manuel Diaz

The Q Grader Licence consists of a series of exams that participants must take in order to become a certified Q trainer. The Q Grader Arabica course was created as part of the Q Coffee System, a body of specialty Arabica coffee cuppers. The Q trainer licence serves anyone who is in a position to evaluate coffee, such as coffee producers, importers and exporters, green buyers, roasters, quality control personnel and baristas.

The Q Grader Certificate is valid for three years. However, in order to renew the licence, the 1-day Q Grader Arabica Calibration Course, which is an accredited calibration exam, can be taken to renew the licence.

The Q Grader Licence consists of a series of exams that participants must take in order to become a certified Q trainer. The Q Grader Arabica course was created as part of the Q Coffee System, a body of specialty Arabica coffee cuppers. The Q trainer licence serves anyone who is in a position to evaluate coffee, such as coffee producers, importers and exporters, green buyers, roasters, quality control personnel and baristas.

This 6-day training and examination course, which includes 22 individual tests, was conducted by an authorised instructor. The test evaluates the participant’s competency and sensory acuity in cupping and grading coffee. Candidates are required to pass all sections in order to qualify for certification. For those who do not pass all sections, retaking the test is only allowed during the course period or any time after, within 18 months.

The Q Arabica (Q Grader) course was created as part of the Q Coffee System to form a skilled and credible body of specialty Arabica coffee cuppers, to objectively assess coffee quality, detect coffee defects, and identify coffee characteristics based on Specialty Coffee Association of America (SCAA) standards. 

Conducted by an authorized instructor, the six-day course comprises of 22 individual tests (click for test details) that evaluate competency and sensory acuity in cupping and grading coffee. Candidates are required to pass all sections in order to qualify for certification, and those who do not pass all sections may retake the tests during the course period or any time after within 18 months. A Q Grader certificate is valid for three years and is renewable upon completion of an accredited calibration exam.

Q Grader Arabica Calibration Course with Manuel Diaz

Launched in cooperation with the Ugandan Coffee Development Authority (UCDA), the Q Robusta (R Grader) course aims to improve the quality of Robusta coffee which is native to Uganda, and train coffee professionals in the standards for Fine Robusta.

The handbook and standards for Robusta are similar to Arabica, but the concepts and formulas have been adjusted accordingly. To be certified, candidates must pass a different set of 22 individual tests (click for test details) in the six-day course conducted by an authorized instructor, and those who do not pass all sections may retake the tests during the course period or any time after within 18 months. An R Grader certificate is valid for three years and is renewable upon completion of an accredited calibration exam.
